Review

Final review. The stack was under evaluation for four quarters and its scores did not move in any of them.

The defining characteristic is the holding tray. Pancakes were produced in advance, stacked four deep, and held under a lamp for a period the review was not able to establish. Everything the rubric measures is downstream of that. Structural integrity at 3.0 reflects a crumb that has dried and firmed rather than one that was built to hold. Syrup retention at 2.4 reflects a surface that has already given up its moisture and will not take any back.

The concrete detail: the underside of the lowest pancake in the stack had taken on the ridge pattern of the tray beneath it. That is a four hour impression, not a griddle mark.

Growth area, recorded for completeness rather than for action: the stack has no control over the conditions it is assessed in. Every finding above describes the service model rather than the preparation. Under a rubric that scored batter alone the stack would likely have placed mid cohort.

The offboarding decision was taken for reasons unrelated to the above. The review programme narrowed its coverage in 2026-Q2 and the stack fell outside it. The final rating stands as calibrated and should not be read as the cause.
